The climatic conditions in the Uherské Hradiště region are comparable to those of the coldest Riesling-growing areas in Europe. As a result, local wines tend to be lighter, more agile, and well-balanced, supported by a low alcohol content that remains below 12.5% even in the warmest years.

Given the delicate and subtle expression of dry Rieslings, we emphasize the use of neutral materials for containers. Therefore, we age wines in a combination of stainless-steel tanks, acacia barrels, and traditional glass vessels. This approach allows them to express not only the varietal character but also the subtle differences given by each specific site and vintage – without any disturbing notes of new or toasted wood.

In their youth, the wines reveal a wide spectrum of fruity, floral, and herbal aromas that highlight the diversity of this variety. On the palate, they are fresh and piquant, with a noticeable tension and tightness. With age, the aromas develop into more complex layers, the flavours deepen in intensity and elegance, and the finish becomes longer and more concentrated.

All our wines generally have a long aging potential. This means that a positive development of individual components can be observed until the year indicated on the back label. However, the exact duration may vary slightly depending on the vintage’s weather conditions. The stated date therefore serves as a guarantee under optimal storage, while still allowing room for further development that cannot be precisely predicted. In exceptional years, some wines may continue to evolve favourably even beyond the indicated limit.

When designing the visual identity of our wines, we sought to find a synergy between traditional values and distinctive expression. For all batches, we use narrow bottle shapes that reflect the historical and varietal heritage of the region.

The dominant element of the front labels was created in collaboration with local artist Veronika Trojková, who created a series of oil paintings based on the local landscape.

Wines from individual villages feature motifs inspired by the relief of the cadastral territory where the grapes were grown. Contour lines depicting the same altitude are shown in a uniform shade, while white brushstrokes symbolize springs and small rivers flowing through the landscape towards the Morava River. The composition is derived from a map template oriented in a north-south direction.

On the back label, you'll find practical information about the wine. In addition to the vintage, the month and year of bottling are also indicated on the sides of the cork closure.

The village of Polešovice is the historical and geographical centre of our region. Its strategic location between the Morava River and the Chřiby Mountains was recognized early on by the Cistercian monks, who acquired the village in 1220 and developed it over the centuries. Their legacy persists not only in the current form of viticulture, but also in several preserved monuments – including the Baroque Church of St. Peter and Paul. 

In the early 20th century, a state vine nursery was established here, which played a significant role in identifying and preserving several local Riesling clones. Some of them can still be found in older plantings today. Thanks to its location and rich tradition, the village is home to the largest number of vineyard sites, characterized by a remarkable diversity of soil and climatic conditions.

The 2023 vintage significantly contributed to the exceptionally elegant expression of this wine. Its deep yellow colour with developing golden reflections reflects the high ripeness of the harvested grapes. The aroma opens with an intense bouquet of summer apricots, medlars, and beeswax, followed in the second phase by a pronounced note of thyme. The palate is precisely balanced – a firm, ripe acidity leads to a long, lingering finish marked by a touch of red grapefruit pulp. Suitable for drinking now, but it will develop beautifully in the coming years. 

We recommend serving it with beef sirloin in cream sauce accompanied by Carlsbad dumplings and cranberries.

The village of Syrovín lies on the southeastern edge of our region, at the boundary between Bzenecko and Kyjovsko. The name of the village is derived from the name "Surova," meaning "raw," which likely referred to the harsher climate or natural conditions of the area. The first written mention of Syrovín goes back to 1371 in the Codex diplomaticus Moraviae, where it appears as part of the Bzenec estate. 

The village’s long tradition of vine cultivation is evidenced by its 16th-century municipal seal, which depicts two bunches of grapes. However, following the outbreak of fungal diseases and phylloxera, the vineyards had to be almost entirely uprooted, and they never regained their former extent. Today, approximately 30 hectares of vineyards remain in Syrovín, planted predominantly with Riesling and Burgundy varieties.

As people who spend most of their time in the landscape, we witness the impacts of climate change with growing concern. We are likely the first generation of farmers to experience these changes on an almost daily basis – and perhaps the last that can still make a meaningful difference.

From the very beginning, we wanted to align our work with an effort that, while it won't solve the climate crisis, at least helps the local landscape better adapt to its effects.

As people who spend most of their time in the landscape, we witness the impacts of climate change with growing concern. We are likely the first generation of farmers to experience these changes on an almost daily basis – and perhaps the last that can still make a meaningful difference.

From the very beginning, we wanted to align our work with an effort that, while it won't solve the climate crisis, at least helps the local landscape better adapt to its effects.

Our winery is committed to donating 10% of the profit from every bottle of Flora & Fauna Initiative wine sold to the restoration of meaningful landscape features. These funds are dedicated to establishing tree lines, field margins, and wooded strips, which were gradually removed during the 20th century due to agricultural intensification.

Beyond funding, we are directly responsible for the implementation – from land acquisition and plant selection to soil preparation, planting, and ongoing care.

This commitment is carried out in two-year cycles.

The grapes are sourced from vineyards across all the villages where we operate, with an average vine age of around 40 years. This brings remarkable concentration and depth to the wine.

Harvesting is done exclusively by hand, in multiple stages, to ensure each variety is picked at optimal ripeness. This is followed by gentle, immediate pressing, minimizing the extraction of pigments and tannins, and allowing the wine to retain a fresh, clean taste profile with a diverse aromatic range.

The blend’s composition changes annually depending on vineyard yields and the ripeness of each variety, making its character distinctive and unrepeatable year after year.

The result is a wine with an intense, ripe aroma, dominated by captivating notes of exotic fruit, lemongrass, and a hint of ground ivy. In the background, a delicate touch of blackcurrant wood can also be detected. On the palate, it is beautifully balanced, with wild raspberry and strawberry tones harmoniously paired with a creamy texture. The overall impression is lifted by crisp acidity, that gives the wine vibrancy and liveliness. Thanks to the inclusion of blue-skinned grapes, it also displays a delicate blush hue. Ideal for drinking from summer 2025. 

We recommend pairing it with pumpkin curry with coconut milk, red lentils, and lime.
